Kueh Ko Swee (Kuih Kosui)

I used the above recipe to make Kuih Kosui recently for a family gathering and it was well received.

I had some challenges getting lye water so I made my own using baked baking soda and water mixed in the ratio 1:4.

To make baked baking soda, I spread a layer of baking soda on an aluminium covered tray and baked it in a preheated oven at 120C for 1 hour. Then scoop the baked baking soda into an air-tight container and keep in the fridge for use when needed. Do not use your bare hands to touch the baked baking soda as it could cause irritation.
